5 Winter Warmer Recipes with Cheese
We’re not quite all the way through autumn, but in anticipation of the cold days ahead, it’s good to start stockpiling warming, ‘comfort food’ recipes to keep the winter chill away. And, when it comes to warming comfort food, we can’t think of anything more comforting than cheese!
Here are five cheesy winter warmer dishes you’ll want to add to your recipe repertoire.
Cheesy Fish Pie with Kale
We’re starting off with this cheesy fish pie with kale recipe from BBC Good Food. Packed with simple but wholesome ingredients, this fish pie dish is easy to make and scale up. It’s extra creamy too, thanks to its filling of whole milk, multiple cheeses and flour. Peas and kale are also added into the filling, as well as fish pie mix (this recipe uses salmon, haddock and prawns).
The filling is finally topped with a mouth-watering cheesy mash before being baked. Serve this fish pie with a green salad for a well-rounded and filling dish perfect for winter.
Alpine Macaroni Cheese
This macaroni cheese recipe from The Happy Foodie was inspired by a warm leek and lardon tart enjoyed after a long hike in the French Alps, making it rather fitting as a winter comfort food.
You’ll start by frying leeks and speck (or smoked bacon), then making creamy macaroni cheese with gruyére cheese, milk, flour and warming mustard and nutmeg. It’s all topped with breadcrumbs mixed with the remaining cheese, then grilled to golden perfection. To turn this into a full meal, you can add a side of steamed broccoli.
Cheesy Potato Bake
If you’re looking for a vegetarian-friendly winter warmer that doesn’t skimp on the cheese, then look no further than this cheesy potato bake from Hungry Healthy Happy. This recipe is an absolute breeze to make and can be enjoyed as a side dish or, when served with bread, a main.
A mustardy cheese sauce, made with mature cheddar, whole milk, butter and flour, is mixed with chunks of potato and leeks, then baked under a coating of mozzarella. For extra indulgence, add a splash of cream to the cheese sauce.
Welsh Rarebit
