If you fancy making it on Sunday night, the chicken can be left to marinate the day before, allowing you to get ahead on your prep. You can also turn this into a veggie version, if you wish, by using tofu in place of chicken.

If you’ve been trying Veganuary this month, you may be looking for some meal inspiration this weekend – and we reckon this vegan tofu stir-fry looks delicious. The sauce contains hoisin sauce, which is made from soybeans and spices and is usually vegan, says the site – but do check the label for non-vegan artificial colourings if you need to.
Beef Burgers with Smoky Sweet Potato Wedges
Craving a burger but minus thousands of calories. This dish comes in at just over 500 calories – not bad at all for a takeaway-style meal, eh? We’re already dreaming about preparing this at the weekend and we bet you are too. Burgers don’t have to be full of fat and barbecued (as below); follow this recipe and give yourself a treat.
