Simple Suppers: Try this Meal in a Mug
Short of time? We realise you want ways in which you can claw back some minutes and hours for yourself during the evenings, which is why we’re bringing you this quick and easy recipe from chef Theo Michaels. Renowned for his simple suppers, Theo has created a cookbook which features meals you can whip up in a mug – and in a microwave! Here’s his recipe for laap – a traditiona Laos national dish. Enjoy!
Theo says: “After travelling through Laos for a few weeks I eventually found myself in Vang Vieng, a tourist hotspot, and had my first plate of Laap. Laap is the national dish of Laos and is in essence a meat salad dish. The meat is fried and given an additionally intense flavour with fish sauce. It is a really healthy and vibrant-tasting recipe.”
- 300ml mug
- 10g vermicelli glass noodles, broken into 2.5cm/1in pieces
- 80g minced/ground pork
- 1 tbsp oil
- 1 tsp cornflour/cornstarch
- 20g beansprouts
- Half a red chilli, chopped and not deseeded, or 2.5ml/
- Half a tsp dried chilli flakes
- One tbsp nam pla (fish sauce)
- One tbsp lime juice
- Pinch sugar
- Two tbsp torn fresh Thai basil leaves
- Two tbsp torn fresh coriander/cilantro leaves
- Two tbsp torn fresh mint leaves
- Six torn fresh spinach leaves
- Salt and ground black pepper
- Place the noodles in the bottom of the mug, then add the pork, oil, cornflour and seasoning and lightly mix with a fork (the noodles won’t combine at this stage but it’s fine for them to remain at the bottom of the mug)
- Place the beansprouts on top and microwave, uncovered on full power for 1ó minutes
- Remove from the microwave, break up the meat with a fork and combine with the noodles and beansprouts.
- Add the remaining ingredients to the mug, stir well and leave to stand for 1 minute.
- Season to taste and serve immediately.
