Meal Ideas for a Cosy New Year’s Eve
Don’t fancy going out this New Year’s Eve? In many ways, we don’t blame you. After all, it’s freezing outside – and after a busy festive season you’re probably ready to flop on the sofa in front of some festive telly.
So, if you’re forgoing a December 31 night out and you’d instead like to enjoy something lovely and homecooked, we have plenty of ‘cosy night in recipes’ just for you. That’s right; we’ve trawled the Internet to find the best dishes for you to try before the year’s out. Read on…
Beef Wellington
Have you ever made Beef Wellington? The word on the street is it’s quite tricky to make; ensuring the meat is cooked perfectly and the pastry isn’t undercooked or burned is a tricky one, but so worth it if you get it right.
BBC Good Food has the recipe for you, so why not give yourself the challenge of cooking this cosy New Year’s Eve meal to see in 2023?
Chilli Con Carne
Everyone loves a chilli – and if you’re not a fan of adding meat to yours, there are plenty of plant-friendly versions to try – including this vegan one.
Jamie Oliver’s recipe for homemade chilli, which contains minced beef and minced pork, is worth a try if you’re a meat eater. The perfect meal for a cosy night in – not just on New Year’s Eve but all year round – this chilli can be served with rice, jacket potatoes, flatbreads or tacos – “it’s your call,” says Jamie.
Citrus Roasted Salmon
If you’re inviting friends round for a meal on New Year’s Eve, know this: comfort food can still be showstopping food. This citrus-roasted salmon is guaranteed to please your guests (if they’re fish-eaters, that is). Elegant and oh-so-simple, says the Country Living site, it cooks in under an hour, meaning it’s relatively simple too.
Three-cheese Meatball Lasagne
Lasagne is always a winner when you just want something cheesy and comforting. So, how about this indulgent three-cheese meatball lasagne, which is a fun and moreish take on a traditional lasagne? It takes lasagne to the next level, says the BBC Good Food site – and it must be tasty as it has a five-star rating.
Serve it with garlic bread topped with cheese…and indulge!
Chicken, Leek and Apple Casserole
The Waitrose site has some great recipes all year round and this one – chicken, leek and apple casserole – is no exception. Taking inspiration from deliciously creamy French casseroles, the leeks release gentle flavour into the sauce while they braise, ‘turning meltingly tender’, says the site. Serve with mashed potatoes and buttered greens or a warm crusty baguette – sounds divine, doesn’t it?
