Festive Cinnamon Mug Cake
We have been getting our Christmas creative hats on and fancied making a scrummy Christmas pudding but with a twist. So after a little while deliberating over our favourite festive flavours, we decided on a cinnamon mug cake! So easy, all you need is a mug, a microwave and a few ingredients!
We have put together a simple step by step process for you to follow and make to really get you in the winter mood!
Ingredients:
4 tbsp of plain flour
3 tsp of granulated white sugar
1/4 tsp of baking powder
1/4 tsp of cinnamon
1/16 tsp of nutmeg
3 tbsp of milk
1/2 tbsp of vegetable oil
1 1/2 tbsp of brown sugar
1 tbsp of butter
1 tbsp of soft cheese
4 tbsp of icing sugar
Step 1
Combine the flour, white sugar, baking powder 1/2 the cinnamon, nutmeg, milk and oil into a bowl and whisk well. (If you lose your whisk like we did, a fork will work just as well!)
Step 2
In a separate bowl, combine the brown sugar, the rest of the cinnamon and 1/2 the butter and microwave for around 25 seconds until the butter melts.
Step 3
Mix the second mixture with the first mixture and pour into a microwave safe mug for around 2 minutes or until the top springs back when you touch it. Leave this to cool.
Step 4
Whilst the cake is cooling you have time to make the frosting for the top. In a bowl mix the rest of the butter, cream cheese and icing sugar and whisk until you have a nice frosting.
Step 5
Pour the frosting onto your mug cake and for a nice decorative touch sprinkle with a bit of cinnamon.

It really is as simple as that and tastes just delightful! This recipe makes around 2 servings or 1 if you have a big mug like us! If you are making them for the family just double the ingredients and then everyone can enjoy!
