Four Quick, Easy & Cheap Evening Meals
This summer, challenge yourself to be more frugal. Helping you save some money for a rainy day, cutting back can do you – and the environment – the world of good. You can start in the kitchen, just one place where we’re all guilty of creating a lot of waste.
Ask yourself this: ‘how much food do I really throw in the bin each week?’ And then consider how that money might be better spent. Surprising, isn’t it?
Here on the My Appliances blog today, then, we’re sharing four quick, easy and cheap summer recipes you can try, which make use of ingredients you may have in your pantry or fridge. Guess what? You don’t even need to use the oven for them, which means you’ll be saving on electricity, too.
Asian Noodle Salad with Chicken and Cilantro
There’s no need to use your oven itself with this recipe; just the stove top.
Purchase a ready-cooked chicken (you may even have some in the fridge, leftover from your Sunday roast) and you’re ready to get started preparing this quick and easy summer meal. #
Don’t forget to grab those noodles that have been sitting at the back of the cupboard for the best part of a year. While the ingredients list uses US measurements, these are easy enough to convert on Google or with your Amazon Alexa gadget.
Easy to whip up, this Asian noodle salad is made in a small saucepan over a medium heat. It takes hardly any time to make – why not give it a go tonight?
Roast Chicken and Mango Salad
Using any leftover roast chicken you might have, prepare yourself a meal for the following evening. Just use this recipe and create a summery dish to be proud of.
Perfect for tucking into with the family, this meal is also a great accompaniment to a barbecue with friends. Of course, you can adapt the recipe and make it your own with any ingredients which need using up in the fridge.

Satisfying and filling, this avocado and crab soup is healthy as well as tasty. Again, this uses US measurements, but it doesn’t take long to convert cups into grams.
Enjoy this as a starter, or as your main but with plenty of chunky bread – delicious! This fish chowder from BBC Good Food makes use of your stove but not your oven, too, making it quick and easy – and delicious. Use up fresh sweetcorn and potatoes in this one-pot wonder. There you go…a bonus recipe for you.
