Like chicken? Then you’ll love this recipe via Fabian Garcia – the executive head chef at Spring Studios in London.
Slow-roasted drunk chicken is the perfect meal to whip up on an evening, or even over the weekend when you have guests to stay.
Slow-roasted Drunk Chicken – Serves 6
You Will Need:
1 1.5 kilo chicken corn fed
1 clementine
2 bulbs fennel
1 bunch lemon thyme
half cup honey
2 tbsp brown sugar
4 tbs wholegrain mustard
5 garlic cloves
3 tbsp lime juice
half cup of whiskey
2 tbsp olive oil
1 cup orange juice
How to Prepare:
Heat oven to 175 degrees
Take all wet ingredients for sauce and mix together
Take chicken and cut in six pieces – cut from neck to middle and each half cut in three
Place in a pan, pour sauce over
Take the clementine cut into 5 slices and place over chicken
Trim fennel and cut into 4 and place on chicken
Make sure chicken submerged in liquid
Place in oven for one hour
Serve with: parsley and roast potatoes or rice
