When life gives you lemons, make lemonade. You know the old expression, but the fruity soft drink isn’t the only thing which could be on the menu if you have a load of lemons to use up. Here are our favourite recipes with the tangy, citrus fruit…

Gregg’s Lemon Tart

Oooh, who doesn’t love a zesty lemon tart? We know we do – and Gregg certainly does. Gregg who? Gregg Wallace, whose recipe for the sweet treat can be found on the BBC Good Food site.

With a four out of five star rating, it can’t be bad – plus it’s ideal for those who prefer a little kick from their post-meal pudding. After all, lots of desserts can be far too sweet; add a hit of lemon and you have just the right balance.

Lemon Curd

Have you ever tried making lemon curd? No, us neither – but it’s supposed to be surprisingly easy. Make use of leftover lemons and give this recipe a go – don’t forget to let us know how you get on by commenting on this blog post, below.

Spread it on hot, buttered toast or eat it straight from the pan (once cooled down, obviously)…we won’t judge.

Lemon Basmati Rice

Here’s a tasty accompaniment to your evening meal – lemon basmati rice. Delicious has the recipe, via Vivek Singh, and it sounds…well…delicious!

It’s an easy, flavour-packed side dish, says the site – perfect for an Indian feast! “Pair it with this succulent lamb shank curry for the ultimate takeaway at home.”

Fresh Pea and Lemon Cous Cous

Ideal for a spring picnic or for adding to a plastic tub to take into work, this fresh and tasty cous cous is wonderfully light and can be paired with all manner of savoury treats. Enjoy with some finger food like samosas or mini cocktail sausages – or serve it with your evening meal with steak, for example. We bet it’ll make a welcome addition to your plate and it’s a little healthier than your usual side of chunky chips too.

It would also be perfect on a buffet table, if you’re planning to have family and friends over for spring. Add a serving spoon and pop it on the table with the rest of your seasonal fayre.

Lemon Meringue Pie

No blog post about lemon-based recipes would be complete without a methodology for lemon meringue pie…are we right? Thankfully, there’s a recipe here and it looks so tempting we can’t wait to head out and get the extra ingredients. There can be quite a knack to lemon meringue pie, but we’ll certainly have fun trying.
