Thai Prawn Noodles

If you love a stir fry and you’re also partial to seafood, you’re bound to like this Thai prawn noodle dish via BBC Good Food. The perfect midweek meal, we reckon the whole family will enjoy it. Serve with some Asian-inspired side dishes and enjoy the spare time you’ll claim back from not spending hours in the kitchen. You could even serve it with chopsticks to give the kids a lesson in culture while you eat!

Goulash

A mash up of chilli and mac and cheese, this 30-minute goulash from TV’s The Pioneer Woman will be a hit around the dinner table any night of the week. Find the full recipe via the link above and enjoy this comforting dish at home, or on the go.

If you blend it down a bit, you could take it in a thermos flask when you’re out and about (watching the kids play footie, for example), with a chunk of bread for dipping. You may need a soup for the goulash, though.

Chicken, Broccoli and Beetroot Salad with Avocado Pesto

Looking for a 30-minute midweek meal that’s also healthy? Look no further! We love the sound of this salad, complete with chicken, broccoli and beetroot. Avocado fans will enjoy the pesto made of the humble fruit, too – and yes, avocado is a fruit (who knew?!). Veggies can substitute the chicken for a plant-friendly ingredient and tuck in to this one as well.

Quick Sausage and Mushroom Stroganoff

This speedy stroganoff recipe is a deliciously hearty winter dish with a rich flavour, says Tesco Good Food. Serving four and taking just five minutes to prepare and a mere 20 minutes to cook, it’s a quick and easy take on a traditional stroganoff. Again, we’re sure you could substitute meat-based sausages for a plant-friendly alternative, too.

10-minute Tuna Mornay Rice Bake

Want to try a recipe that takes just 10 minutes to bake? Course you do; who wouldn’t want to cut down on cooking time?! When you’re rushing about on a weeknight or weekend, this is the ideal dish to throw in the oven – and you can find the recipe on the Taste site.
