Next Week is National Vegetarian Week!

If you’ve ever toyed with the idea of going veggie, next week – National Vegetarian Week (May 10 to 16) – could be the perfect time to give it a go, even if just for the seven days.

Choosing more veggie food is one of the best things we can all do for the planet, says the people behind National Vegetarian Week – and they’re inviting you to take part in a free challenge, which they say is as easy as one, two, three! You can get your challenge kit here – and you’re encouraged to nominate others to join you too.

Is vegetarianism for me?

The NHS has prepared a handy guide on the vegetarian diet, for anyone thinking of taking up a veggie lifestyle, next week or in the future. The guide covers everything from healthy eating as a vegetarian to ensuring you’re getting your essential vitamins and minerals via the right supplementation.

If you’re not sure if going veggie is the right thing for you, the BBC has some information here. In a piece called ’10 things you should know before going veggie’, they lay out all the finer details of taking on the plant-friendly lifestyle. Jamie Oliver always comes up trumps when it comes to recipes – and his vegetarian ones are no exception. Let’s take a closer look at this one – his speedy quiche traybake.

An easy mid-week meal or weekend dinner, this quiche swerves away from a classic bacon-filled Quiche Lorraine and safely into veggie territory. Give it a try.

There are also plenty of pocket-friendly veggie recipes to try online – you’ll find lots on the Budget Bytes site. Ideal if you’re just dipping your toe into the world of vegetarianism, these meals won’t break the bank, yet promise to be delicious.

Easy Veggie Meals

If you don’t fancy anything on the Jamie Oliver or Budget Bytes sites, why not take a look at Olive magazine’s offering? The site has lots of easy meals to try, which may well convert you from a meat-eater to a full-time vegetarian. We like the look of the vegetarian lasagne, which we’re pretty sure won’t scrimp on flavour.

Olive magazine says: “This is an easy veggie alternative to the classic family dish, lasagne. With layers of greens and fresh pesto, this kale, ricotta and leek lasagne is low in calories and super-easy to whip up, making it a great midweek meal.
